Thank you Jennifer for sharing your Taste Champion Recipe for Key Lime Cupcakes


  • 1 box super moist lemon cake mix
  • 1 box lime flavored jello
  • 3/4 cup water
  • 1/3 cup key lime juice
  • 1/3 cup veg oil
  • 3 eggs
  • 3-4 drops green food coloring

Mix ingredient, sans eggs, for 30 seconds. Add eggs, 1 at a time, thoroughly mixing after each egg. Beat on high for 2 minutes while adding desired amount of food coloring. Bake at 325 for 19 minutes or until done. Do not over cook. Let cool in pan 10 minutes.


  • 1 cup powdered sugar
  • 2 1/2 Tbsp key lime juice

Add juice to powdered sugar slowly, while stirring, until a glaze of medium viscosity is formed. While cakes are cooling in pan, poke several times with toothpick and pour 1 tsp of glaze over top and spread to cover completely. Remove from pan and let cool at least 30 minutes before icing.


  • 1 can whipped buttercream icing
  • 4 oz room temperature cream cheese
  • 1 tsp almond extract

Whip icing and cream cheese until thoroughly combined. Add extract. Pipe on to cooled cupcakes.
